Cookies for Santa!!
Hi Hi! Today we are going to give you a lemon, cinnamon and almond cookie recipe for Santa. The first thing is to weigh and keep all the ingredients ready; here is the list and the portions:
250 g unsalted butter
100 g icing sugar
100 g of brown sugar
400 g of all-purpose wheat flour
2 teaspoons ground cinnamon
½ teaspoon baking soda
½ teaspoon of salt
100 g of almond flour
First, we put the butter, the icing sugar (sifted), the brown sugar and the lemon zest and mix everything together, then the egg is added once beaten. Then the flour, cinnamon, baking soda and salt (sifted) are added and everything is mixed. Finally the almond flour is added. This will form the cookie dough and I assure you that it is not sticky at all, it can be worked perfectly.
After making a couple of balls or three with the dough, it is stretched on a baking paper with a rolling pin and stored for an hour in the fridge so that it becomes cold and hard and we can cut them well with the cutters that this time we have used with Christmas figures.
Once the cookies are cut they can be decorated with cocoa, stencil and a brush before baking. Or they can be decorated later once baked with royal icing and sprinkles or even edible markers.
Bake time is 10 minutes with the oven at 180 degrees Celsius or 356 degrees Fahrenheit.
Finally, we only have to taste them, and I already tell you that they are delicious.
By the way, to package them, do it in a metal box so that they are preserved for a longer time.
