Carrot cake cookies offer a delightful twist on the traditional carrot cake, infused with the same warm spices and sweet, earthy flavors. These cookies usually contain grated carrots, shredded coconut, chopped nuts, and occasionally raisins, all mixed into a dough that echoes the beloved cake. Spiced with cinnamon, nutmeg, and cloves, they deliver a comforting and familiar taste. Cream cheese frosting, a signature of carrot cake, can be drizzled on top or sandwiched between two cookies, creating a perfect balance of sweet and tangy. These cookies are a wonderful way to savor the essence of carrot cake in a convenient, handheld treat.



INGREDIENTS


💕 Ingredients:


  • 100g unsalted butter

  • 60g white sugar

  • 60g brown sugar

  • 1 egg

  • 150 flour

  • 1 tsp cinnamon

  • 1/4 tsp ginger

  • 1/4 tsp nutmeg

  • 1/4 tsp cloves

  • 1/4 tsp salt

  • 150g grated carrot

  • 50g walnuts

  • 50g raisins


💕 Frosting ingredients:


  • 40g butter

  • 40g icing sugar

  • 40g cream cheese

DIRECTIONS


  • In a bowl, put the butter at room temperature with the 2 types of sugars and beat at medium speed for 3 or 5 minutes.

  • Add the egg and continue beating for another minute.

  • Now add the dry ingredients and continue mixing everything.

  • Add the carrot and continue mixing.

  • Finally, add the raisins and chopped walnuts.

  • Put the mixture in another bowl, cover it with transparent paper and place it in the refrigerator for a couple of hours or until the next day.

  • Make balls of about 50g and flatten them a little.

  • Place them in the oven on a tray with baking paper at 180C for about 14 minutes.

  • Take them out of the oven and let them cool.

  • Now we are going to make the frosting: Mix the butter and icing sugar and when they are well integrated, add the cheese and continue mixing until the frosting is ready to decorate our cookies.
